Dinosaur Orange and Coconut Cupcakes
Easy to make and taste great and even better are DAIRY FREE.

    

Ingredients

2 cups of self-raising flour

1/2 cup desiccated coconut

1 cup of caster sugar

2 teaspoons of orange rind grated

1 medium tin of coconut milk 270ml

1/2 cup light olive oil, or rice bran oil

1 egg, lightly beaten

Dinosaur Jelly sweets to decorate + icing sugar + jam to glue the sweets on.

Method

Sift the flour into a large bowl. Stir in the coconut, sugar, and orange rind. Make a well in the centre and stir in the combined coconut milk,oil, and egg. Spoon into cupcake cups or small coloured paper patty cases. Cook in a moderately hot oven 190C for 15-20 minutes if using cupcake cups or 12 minutes if using small patty papers.

Decorate and ENJOY!
